Founder
Meet Will, whose visionary creativity and unwavering determination propelled Halwyn from a light bulb moment in summer 2021 to where we stand today. Will served as project manager and creative lead, overseeing everything from architectural and interior design to the development of our mini-golf and brand direction.
With a background in real estate, he launched his career in Vancouver, Canada, and spent nearly a decade in London before returning home to Cornwall. Here at Halwyn, nestled on Trevowah Farm purchased by his Great Grandad, Captain Jack, in 1944, Will takes pride in what we’ve achieved so far.
MATT HAGGATH
Head Chef
Let us introduce our Head Chef, whose background includes the Savoy Grill London and Idle Rocks, where he led the kitchen to 3 Rosettes. His menu is rooted in flame, flavour and fresh local produce. Matt has been a big part of the Halwyn journey long before we launched, helping to shape the menu, design the new kitchen, and offer his expert insights into how to create an outstanding culinary experience.
FINLEY START
Front of House Manager
Folks, we’d like you to meet Finley Start, our FOH Manager. Fin finessed his rounded skillset whilst working at the prestigious Headland Hotel. He is the man with the beaming smile who makes Halwyn tick and will always be happy to help our wonderful patrons. Fin too was part of the Halwyn journey long before launch and his expertise have been critical in shaping our service offering.
